Monday Night Meals - Soup and Sandwich Night

Monday Night Meal 1

Today' Monday Night Meal comes courtesy of my 6-year old daughter, Eva. It was her night to help cook in the kitchen and she decided it was definitely a soup and sandwich kind of night. We decided to take the traditional turkey sandwich to the next level and create our own Italian Turkey Sandwich Bites. Since it's been so cold lately, we really couldn't think of anything that would taste better than a bowl of Cheesy Broccoli Soup! Tonight's meal turned into quite the hearty dinner, jam packed with healthy and delicious vegetables!

Italian Turkey Sandwich Bites

Ingredients:
-1 loaf of your favorite Italian bread
-1/4 cup olive oil
-3 TBLS Italian Dressing (I use *Olive Garden brand)
-1 TBLS fresh basil finely chopped
-2 cloves garlic minced
-1/2 tsp salt
-1/4 tsp black pepper
-3/4 lb. sliced Turkey deli meat
-6 slices of sliced Provolone cheese
-1 to 2 tomatoes sliced (depending on size)
- 1 red pepper chopped

Feel free to add your own favorite ingredients like spinach, cucumber, or olives!
Directions:
1. Slice your bread in half length wise.
2. Mix the olive oil, Italian dressing, basil, garlic, salt, pepper together and brush on both sides of the bread.
3. Layer one side of the bread first with the Turkey, followed by the cheese, and then the tomato.
4. Over medium heat, drizzle some olive oil in a small skillet and saute the red peppers for a few minutes until they begin to soften.
5. Sprinkle the red peppers over the tomato and then place the other half of the bread on top (like you are making a sub sandwich).
6. Wrap the whole sandwich in plastic wrap tightly and place in the refrigerator until you are ready to eat.
7. To eat, slice the bread into small "sandwich size" slices.

Cheesy Broccoli Soup

Cheesy Broccoli Soup
If you love cheese - this soup WON'T disappoint! 
Ingredients:
-3/4 cup butter
-1/2 onion finely chopped
-2 cloves garlic minced
-3/4 tsp salt
-1/4 tsp black pepper
-3 TBLS flour
-3 cups chicken broth
-4 broccoli crowns
-1 cup half and half
-8 oz. shredded sharp cheddar cheese

Directions:

-In medium sized pot, melt butter over medium heat.
-Saute the onion until translucent (about 5 minutes) then saute the garlic for another 2 min.
-Add salt, pepper, and flour and cook until well combined.
-Whisk in chicken broth until slightly thickened.
-Add broccoli crowns simmer for 15 minutes stirring occasionally. The broccoli will break apart as it cooks and you stir.
-Add the half-and-half and stir until combined.
-Finally add the shredded cheese and stir until it is all melted.

  2. I love using simple and fresh ingredients whenever I can - the fresh broccoli makes all the difference, even in the texture! My hubby's favorite part of the soup is that you can actually taste the REAL cheese :) Hope you enjoy it as much as we did!

  3. That cheesy broccoli soup looks amazing. I would like to make it sometime, but my boyfriend won't eat vegetables so it would be just for me!

    1. You might be surprised Emily! The broccoli really breaks up when you make the soup - and with the great cheesy flavor, me might not even notice the taste of the veggies :)

    1. So many broccoli and cheese soups use frozen broccoli and velveeta cheese - I had to create a soup that used fresh ingredients! Fresh ingredients always make things taste so much better!
