Monday Night Meals - Slow Cooker Stroganoff

It's time for another Monday Night Meal from Our Southern Style! Tonight's recipe is one of my 11 year old daughter Mariyah's favorite meals to make. She has quickly figured out that when it's HER night to help cook in the kitchen, a slow cooker gets the work done faster and leaves her more time for girl talk with Mom! Plus, can I get an "Amen" for fewer pots and pans to clean! For my Slow Cooker Stroganoff, I took a lot of the same ingredients I use in my more time consuming Stroganoff and edited them to work well in a crock pot. Tastes great and takes a lot less work! Serve hot over egg noodles. Throw some steamed vegetables on the plate or add a salad and meal is complete!

Ingredients:

**Serves 6 - 2 lb Beef Chuck Roast - 2 (10oz.) condensed cream of mushroom soup -1 onion chopped -1/3 cup white cooking wine -1/2 tsp. salt -1/2 tsp. black pepper -1/2 cup beef broth -1 tsp prepared yellow mustard - 1/2 cup sour cream

Directions:

Step 1: -Empty 1 can of condensed cream of mushroom soup into the bottom of your slow cooker. I love mine from Brylane Home!

-Place the meat on top and then add the second can of cream of mushroom soup, onions, cooking wine, salt, and pepper to the pot.

-Whisk the mustard into the beef broth and pour over the rest of the ingredients.

It doesn't look like much, but don't worry, it will taste delicious!
   Step 2:

 -Cover with lid and cook on low for 8 hours or high for 5 hours.

 -Once the dish is finished cooking, remove the meat and give the "gravy" a stir to fully incorporate everything.

Your dish should look like this before you remove the meat and add the sour cream.
   Step 3:

 -Shred the meat ( two forks work nicely) and remove any fat.

 -Add the sour cream to the gravy mixture and whisk well.

 -Pour the gravy over the meat and serve immediately over noodles.

  1. WOW! This recipe for Slow Cooker Stroganoff looks and sounds delicious! I can't wait to give it a try! My family and I do not like mushrooms, so I generally replace Cream of Mushroom Soup with Cream of Potato Soup! It works just as good and I know everyone will eat it!
