Fried Asparagus with Southwest Dipping Sauce

There's just something about crispy, crunchy vegetables! I can never seem to get enough of them! This recipe is great to use as an appetizer  for your next dinner party or just a new way to make your traditional asparagus dish a little bit fancier. I definitely recommend paring it with the Creamy Southwestern Dipping sauce!


Ingredients:

  • 1 bunch of asparagus
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1 tsp salt
  • 1 tsp Cajun spice mix (I use McCormick)
  • 1 cup milk
  • 2 eggs
  • peanut oil or vegetable oil for frying

1. Start by washing and drying the asparagus and then trimming off the ends - about 1 " - just enough to trim off the white part at the end.

2. Mix the wet ingredients together in a shallow dish and do the same with a dry ingredients (I like to use pie pans or small casserole dishes)

3. Dip the asparagus in the milk/egg mixture and then dredge them in the flour/cornmeal mixture. After battering each one - repeat the process.

4.  Heat the oil in your deep fryer ( I love my Digital Double Deep Fryer from Brylane Home!) to 350 degrees and fry the asparagus for 2 to 4 minutes until the asparagus is golden brown.

5. Drain on paper towels and enjoy with Creamy Southwest Dipping Sauce (See Recipe Below) This sauce is also great for Onion Rings!

  12. Oh yum, these sound delicious. I love fried veggies. Give me a blooming onion or fried mushrooms anytime. I have to say I've never had fried asparagus though. I'll have to try it. Thanks for sharing.
